Salads are no longer equal to boring food eaten on a diet – they now make a great small meal or appetiser. Whether you’re looking to have something light and refreshing in summer or have just made a resolution to eat healthy, these easy-to-make salad recipes will make your stomach and taste buds happy.

1. Mediterranean Broken Wheat Salad

This zesty salad is full of nutrients and fibre.

Time: 20 minutes

Serves: 6

Ingredients for salad

1 cup broken wheat (dalia)

1 cup cherry tomatoes, cut in half

1/2 cup celery, diced

1/2 cup olives, cut in half

1/2 cup red and yellow bell peppers, chopped

1/3 cup onion diced

Ingredients for dressing

1 lemon’s juice

1 clove garlic, minced

1/4 cup parsley, chopped

Salt and black pepper

3/4 teaspoon dried oregano

A pinch of red pepper flakes

1/2 cup olive oil


  1. Boil water and remove from heat. Then add broken wheat to the hot water and cover it. Set aside for 15-20 minutes for the wheat to absorb the liquid.
  2. Meanwhile, mix the chopped vegetables in a large bowl.
  3. Take the lemon juice and add garlic, parsley, red pepper and oregano with salt and pepper. Once well mixed in the juice, add it to the olive oil and whisk well.
  4. The wheat should now be ready and soft. If there is any liquid left, strain it. Once cooled, toss with chopped vegetables and half of the dressing. Taste and add more dressing and seasoning as needed. Do not make the salad too wet or gooey.
  5. Serve chilled.

2. Spicy Peach Salad

Try this spicy salad for your mid-meal hunger pangs.

Time: 15 minutes

Serves: 8


3 tablespoons lemon juice

3 tablespoons olive oil

2 teaspoons honey

1 onion, finely chopped

1 red chilli, thinly sliced

Salt and pepper

3 peaches (should be ripe but firm), cut into wedges

2 avocados, cut into wedges

1/4 bunch of fresh mint leaves, torn


  1. Mix lemon juice, olive oil, honey, onions, and chilli in a bowl with salt and pepper.
  2. Add peaches and toss well. Let it sit for 15 to 20 minutes.
  3. Add avocado and mint, then serve at room temperature.
  4. If needed, add more lemon, oil and seasoning.

3. Honey, Chicken & Avocado Salad

The sweet honey combined with tangy marinated chicken makes a lovely dish to have for your next meal.

Time: 25 minutes

Serves: 4

Ingredients for dressing and marinade

1/3 cup honey

2 tablespoons mustard

2 tablespoons olive oil

1 tablespoon vinegar

1 teaspoon garlic, minced

Salt to season

4 boneless chicken breasts

Ingredients for the salad

4 cups lettuce leaves, cut

1 cup cherry tomatoes, sliced

1 avocado, sliced into wedges

1 onion, sliced


  1. Mix ingredients for the dressing and use half to marinate the chicken for about two hours. Refrigerate the rest.
  2. In a pan, sear chicken until golden and crispy. Once cooled, slice chicken into wedges.
  3. Mix the chopped salad ingredients along with the chicken pieces.
  4. Take the refrigerated dressing and add water to make it thinner. Drizzle over the salad and season with salt and pepper.
  5. Serve at room temperature.

4. Cucumber, Celery & Sour Cream Salad

3 tablespoons sour cream

3 tablespoons olive oil

3 tablespoons. lemon juice

1 tablespoon fresh dill, chopped

1 small onion, sliced


  1. Whisk sour cream, lemon juice, dill, and oil. Add salt and pepper as needed.

Ingredients for salad

200 grams lettuce, sliced long

1 red bell pepper, sliced

3 mangoes (should be ripe yet firm), sliced

1/2 cup green onion, sliced

1/3 cup roasted peanuts, chopped

1/4 cup fresh coriander, chopped

Ingredients for the dressing

1/4 cup peanut butter

1/4 cup lemon juice

1 tablespoon soy sauce

1 tablespoon vinegar (or apple cider vinegar)

2 cloves garlic, minced


  1. Assemble all the chopped ingredients of the salad and mix gently. Ensure that the mangoes do not get mashed or crushed.
