Whether you have it as a dip or enjoy it in your falafel, the Middle East’s most popular dish, hummus, has become a huge part of our food. As we celebrate Hummus Day, Mumbai’s Za’atar restaurant offers a peek into their kitchen and gives us the recipe for its delicious Avocado Houmous.

Serves: 2 to 3
150 grams cooked chickpeas
1 clove garlic
2 tablespoons tahini paste
3 tablespoons olive oil
3-4 tablespoons water
1 green chilli, chopped
1 tablespoon coriander leaves, chopped
2 teaspoon lemon juice
Salt to taste
1. In a blender, add the garlic, chilli, lemon juice, salt and tahini. Blend until smooth.
2. Add the chickpeas and blend till fine. Then, add water and olive oil gradually to the mixture.
3. Once you have a smooth paste, add the avocado and coriander leaves and puree until the mixture is free of any lumps.
4. Once the hummus is ready, transfer to a bowl and create a well in the middle. Pour some of the remaining olive oil into the well.
