The Colour Of This Rice Changes To Deep Purple When It Is Cooked And It Is Due To High Level Of Antioxidant Called Anthocyanin.

How To Cook Use Black Rice - Black Rice Takes Longer Time To Cook Compared To White Rice. It Should Ideally Be Stored Under Refrigeration And Used Within Six Months, To Prevent Spoilage. Rinsing & Soaking The Rice Before Cooking Will Help To Bring The Cooking Time Down. As A General Rule, Black Rice Should Be Cooked With 2 Cups Of Water To Every One Cup Of Rice & It Will Need To Cook For 20 - 30 Minutes After Soaking, Or Upto 60 Minutes If You Cook Unsoaked Rice.

Cooking Instruction - Soak It Overnight For Optimal Digestion, Or Simply Wash It Well 2-3 Times & Drain. Place The Rice In A Pot With 2 Cups Water & A Couple Pinches Of Sea Salt(Add The Ghee Or Coconut Oil If You Like). Cover With A Tight-Fitting Lid, Bring To A Boil & Reduce The Simmer. If You Are Using Soaked Rice, Check For Doneness After 20 Mins & Drain Any Excess Water. Otherwise Leave It To Cook For 50-60 Mins. The Rice Should Be Soft, Yet Chewy.
